Please look at your olive trees now! Olives fruit on one year old wood.  This wood produces flowers and eventually fruit during the current year.  Try to develop a system of renewal pruning where you cut back extension growth to a natural leader which will then take over the growth and next year" s crop. And so on,,..

 I have gardened in sub-tropical Florida, maritime UK, continental Europe and the Mediterranean basin, France. Of the 4 I have found that the most difficult climate for gardening is the latter.
